Supple, sweet. Think pork belly. I don’t know how they did it, and part of me never wants to know. Anyone who knows me will attest to the fact that I love all snails, by land or sea. I’ve plucked and prepared my share, but this, my friends, hands down, is it. I may eat my fill tonight, even if I catch my death in doing so. Uric acid? Gout? Bah!
